The Oregon Department of Corrections has a Dietitian 2, Food Service Administration opening. This position will be stationed at ODOC Headquarters in Salem, Oregon and is approved to work a hybrid schedule of in-office and remote work. This position will also require traveling throughout the state. The intent of this recruitment is to fill the vacancy with a fully qualified Dietitian 2. However, there is an option to underfill with a Dietitian 1. All interested parties are encouraged to apply. This recruitment maybe used to fill future vacancies.

About The Job – Your Role
This position will also work closely with the Food Service Administrator, assisting to implement direction and policy for the Food Service operations in the department. May act as an agency liaison with media regarding nutrition issues; may represent Oregon Department of Corrections at local, state and national committees and meetings.
This position manages the nutrition program for the Oregon Department of Corrections (ODOC) facilities and will certify a statewide cycle menu for both standard and therapeutic diets for AICs housed in the ODOC. This position has a unique level of technical expertise that is critical to the success of the agency. The dietitian directly influences management decisions within the agency regarding the nutrition program. Management and peers rely on this positions’ level of technical guidance when making decisions regarding nutritional makeup of the menus, menu costing and the dietary program. Other responsibilities include assisting the FSA in the writing of food specifications and evaluation of food vendor products and coordination of food-service audits. This position is a contributor in the evaluation of food-service operations through audits, which involve annual inspections in the areas of budget, sanitation, safety, security and menu compliance, through the team process. This position also provides direction, training, consultation and technical assistance to food service programs in the areas of menus, portion control, nutrition and therapeutic and religious diets. This position performs dietetic related research and is the nutrition expert for the department.
Minimum Qualifications

- A Bachelor’s degree that includes coursework that satisfies acceptance criteria for Dietetic internship AND completion of required dietetics coursework and supervised practice through a Didactic Program in Dietetics and Dietetic Internship or a Coordinated Program in Dietetics accredited by the Accreditation Council for Education and Nutrition in Dietetics; AND
- Active status as a Registered Dietitian by the Commission on Dietetic Registration; AND
- Three (3) years of work experience as a Registered Dietitian.
Underfill Minimum Qualifications

- Active status as a Registered Dietitian with the Commission on Dietetic Registration; OR
- Must be registered as a Dietitian with the Commission on Dietetic Registration for at least six months of hire date.
The Registered Dietitian/Registered Dietitian Nutritionist designation is a nationally legally protected title and is a professional credential granted to an individual who meets the qualifications established by the Accreditation Council for Education and Nutrition in Dietetics and the Commission on Dietetic Registration.

Requested Skills
- Excellent written and verbal communication skills
- Develop educational materials, conduct training and presentations, evaluate, and provide follow-up assistance to staff and AICs in the areas of general nutrition
- Review and certify seasonal menu to assure that federal, state and ODOC nutritional guidelines are met
- Modify menus in accordance with budget requirements, calorie needs, and product availability
- Develop and evaluate standard and specialized recipes
- Educate on general nutrition and train on proper preparation of special dietary needs
- Calculate nutrient levels, update recipes and enter new food products in the menu software program

- Develop secondary menus for work camps, sack lunches, religious diets, and meat alternative
- Inspects meals served for conformance to prescribed diets and standards of palatability and appearance
- Interpret and apply state and federal rules, policies, procedures, and regulations
Required
- Possess valid ServSafe certification or must obtain in 6 months of being hired
- Possess Oregon Driver’s License

Working Conditions
This position will require to travel throughout the state visiting the 12 institutions. Occasionally may work in close contact with Adults in Custody in an institution and may be exposed to hostile situations or incidents. You could be exposed to high noise levels, and extreme temperature changes. Potential for staff injury is high, may be exposed to harmful chemicals, and subjected to other hazards associated in accomplishment of assigned duties at minimum, medium and maximum security facilities. May be required to work extended hours and travel overnight.

The successful candidate for this position must pass a Criminal Justice Information Systems (CJIS) fingerprint-based background check and maintain CJIS eligibility.
